Pumpkin Chocolate Chip Cookies

5 1/2 cups flour
5 tsp baking powder
3 tsp baking soda
2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
6 eggs
3 cups sugar
1/2 cup canola oil
29 oz. can pumpkin
3 tbsp vanilla
9-12 drops orange food coloring
2 packages semi-sweet chocolate chips

Set oven to 375 degrees.

Mix dry ingredients (except sugar) in a bowl. In a separate large bowl, mix eggs and sugar until fluffy. Add oil, vanilla, food coloring, and pumpkin to the eggs and sugar. Slowly stir in the dry ingredients. Add both packages of chocolate chips. Scoop batter onto a greased cookie sheet using a 1/4 cup measuring cup, leaving at least 1 inch between cookies. Bake until the center of the cookie is firm, and a toothpick inserted in the center comes out clean- about 10-13 minutes.

This recipe makes between 40 and 50 cookies.
